Exchanges between our chef Frédéric and the person in charge of the wine selection. Indeed, our restaurant menu is renewed twice a year. The wine list of our restaurant in Vannes also evolves in the same way, with the aim of accompanying the dishes offered according to the season.

According to Énora: "You also have to think about the dishes that you are going to propose on the slate in such and such a season. The most difficult thing is that you can't anticipate the dishes of the day two months in advance!

In her selection, she will therefore go for wines that go with the seasonal menu but also wines that can more easily be combined with a wide range of flavours. Our restaurant usually selects one or two wines from each region, for a diverse wine list.

When the restaurant creates a special menu for a particular occasion, we automatically suggest a food and wine pairing.

In addition, Énora uses customer feedback to choose certain wines that are very popular and to build up the restaurant's cellar.

"There is also the wine of the moment that we put forward on the slate, a wine that we won't keep for long in the restaurant but which will go perfectly with certain dishes of the moment. We also take advantage of this to propose local wines from small local producers, the idea is to discover! And we can have some nice surprises.

His advice: Choose a Loire wine to match your menu composed of fish and meat. Alternatively, you can choose to taste your wine by the glass in Vannes, for a perfect match with the dish in question.

Énora likes to offer local beers, for example from the Lancelot brewery in Morbihan. But also lesser known local and craft beers, such as La Dilettante (organic beer) and La Flemme in St-Nolff.
